OUR CRAFT
FROM THE VINEYARD TO THE BOTTLE
OUR CRAFT IN SIX CHAPTERS
Crafting exceptional vintage sparkling wines lies at the heart of everything that we do. Working at one with nature, we strive to create wonderfully individual wines that are a generous expression of the growing season in which they were made and worthy of the most joyous ‘vintage’ celebrations.

HAND IN HAND WITH NATURE
Growing the best fruit in England is key to producing exceptional sparkling wines and only the finest perfectly ripe bunches are selected for our vintage sparkling wines.
HANDPICKED FRUIT
Individual bunches are harvested by hand to preserve the integrity of the fruit and gently whole bunch pressed at the winery, yielding only the highest quality juice.

CRAFTING VINTAGE WINES
Crafted from a harmonious blend of classic
Champenois grape varieties, and produced
according to the traditional method, our
in-house team of expert blenders work
hand-in-glove with our partner wineries
to produce exceptional vintage
sparkling wines every single year.
RESPECT FOR TRADITION
Each vineyard block is vinified separately, giving us a multitude of components to work with when blending our sparkling base wines.
A small proportion of our wines are partially fermented in fine, aged Burgundian oak barrels, imparting complexity, depth and texture on our final blends.

ART OF BLENDING
Blending is one of the most important stages in the wine making calendar as it is the moment where our wines come to life, and we get to discover the true character of the vintage.
Each wine is meticulously assessed for its quality, aromatics and distinctive characteristics before being blended to create the perfect picture of the vintage.
Each variety plays an important role in the blend. Pinot Noir adds structure and texture, Chardonnay brings elegance, acidity and aromatics and Pinot Meunier fills in the gaps with its floral and perfumed notes.
AGED TO PERFECTION
Crafting exceptional vintage sparkling wines requires time and patience. We aim to produce deliciously complex wines displaying the perfect balance of elegance and depth of flavour. To achieve this, we allow a generous period of lees-ageing in bottle for a minimum three years followed by significant time on cork before release.
